These cows have never been given antibiotics, growth hormones or chemicals. They have been grass-fed (our pastures and winter hay are pesticide free) their whole lives with a bit of grain each morning to keep them tame.

We are charging $4 per lb/hanging weight, each share is estimated to be between 200-300 lbs before butchering. This should yield you 120-150 lbs of beef to put into the freezer (about 6-8 cubic feet).

Live weight includes hooves, skin and organs; hanging weight is bones, fat, and muscle after slaughtering; butchering weight is cut up and is about 60% of the hanging weight.

If that is too much beef, let us know and we’ll try to match you up with another person so you’ll get ½ share each (about 60-75 lbs).

Shares will be available at the end of February. Eagle Bridge needs to dry age 21 days before they package and freeze the meat.

Two of the shares are from a cow older than 24 months, so no bones with her (this means tenderloin instead of porterhouse, no rib steaks, etc.).

Proudly processed and slaughtered by Eagle Bridge Smokehouse in Eagle Bridge, NY.

If interested, please e-mail me at j.thompson@hvcc.edu and we will send you a cut sheet and details to get started.

Published: Wed, 22 Jan 2014 15:58:38 +0000 by j.thompson

We are selling four (4) shares (1/2 of the cow each) of our last two Jersey/Hereford crosses.
